Healthy Snickers: Peanut Butter Stuffed Dates Recipe

Ingredients:

  • 20 medjool organic dates
  • 1/3 cup chunky peanut butter or nut butter of choice
  • ¼ cup coconut oil
  • ¼ cup cacao or cocoa powder
  • Sea salt flakes (optional)

Instructions:

  1. Line a large baking tray with parchment paper.
  2. Slice open each date and remove the pit.
  3. Spoon a small amount of peanut butter into the center of each date.
  4. Melt the coconut oil and mix it with cacao powder to create a chocolate drizzle (or melt pre-made dark chocolate).
  5. Drizzle the dates with the chocolate or dip them for full coverage. Optionally, sprinkle with sea salt.
  6. Refrigerate until chocolate hardens.
